I have had a few requests for a festive biscuit recipe, to bake and decorate with the kids over Christmas and for adults to simply enjoy with a cup of tea. Today I made some cinnamon cookies for Moo Moo's preschool friends and I wanted to share this recipe with you.
Order Christmas Cakes from Moo Cakes
225g unsalted organic butter
225g golden caster sugar
1 large organic egg
1 generous teaspoon of cinnamon
375g organic plain flour
(This recipe will make about 24 cookies)
Have all of your ingredients at room temperature and get your little helpers to help you weigh out the ingredients. Grease or line your baking trays.
Using your hand mixer, cream together your butter and sugar, for a good few minutes, until light and fluffy.
In another bowl, sift the flour and the cinnamon.
Add the egg to the butter and sugar mixture and mix until fully incorporated. Then add the flour and cinnamon to the wet mixture and thoroughly mix until you form a dough.
Wrap the dough in cling film and leave in the fridge to chill and firm for 30 minutes.
When the dough is ready, my tip, is to roll the dough out in between two layers of clingfilm. When thin enough (about 4mm), remove top layer of cling film and use your chosen cutter to create your festive cookies.
Place on your baking tray. My next tip, place the baking tray in the fridge for at least 15 minutes. This helps to prevent the cookies from losing their shape when they bake.
Whilst the cookies are in the fridge, Preheat the oven to 180c/160c fan/gas mark 4.
Bake in the middle shelf of your oven for 10-12 minutes, this depends on the size of the cookie you bake, you want the cookie to be golden in colour, not pale. Allow them to cool on the tray and then move them to a cooling rack.
The result - a buttery, cinnamon, biscuit delight to be enjoyed by the whole family. Smashing with a lovely cup of tea too.
