I want to share another delicious pancake recipe, a chocolate and pancake lovers dream. Whether you're an adult or child, prefer modern cookery or a touch of the retro - this is a winner. I call them my Black Forest pancakes (a nod to the retro, with elements of the super yummy gateaux) simply put, they are Chocolate & Cherry Pancakes. Perfect for an indulgent weekend brunch or as a heavenly dessert. Here's what you'll need...
1/2 Large cup of Marriage's organic brown flour
1/2 Large cup of Marriage's organic plain flour
Large cup of organic milk
2 large organic eggs
Pinch of sea salt
Tbsp of organic cocoa powder
Tsp golden caster sugar
For the Cream
Small tub of creme fraiche
Small tub of natural yogurt
1/2 tsp of vanilla extract
Tsp of unrefined icing sugar
And the Cherries
2 packets of frozen cherries
Juice of an orange
1 tsp of cinnamon
Rapeseed oil for cooking.
The Chocolate Pancakes:
Super easy to make - I like to use a large cup to measure all of the ingredients, as it always produces the perfect amount and consistency of the batter. Start by combining all of the dry ingredients together, that's the two flours, the salt, the cocoa powder and the sugar. Now, crack in your eggs and add your milk, whisk until you have a smooth batter and then set aside.
Get a tray in your oven and heat it up to 80 degrees, this will be great for keeping the pancakes warm whilst you cook the rest.
Next to the cream. I like to use a mix of creme fraiche and yogurt. Creme fraiche, for the slightly sour flavour (goes great with the cherries) and yogurt, because it adds to the nutritional value of this dish. Add the creme fraiche and yogurt, the vanilla extract and a teaspoon of icing sugar - again, give it a good mix and that's that.
The cherries are just as simple. Due to a short season, I use British frozen cherries - otherwise, you'll only be able to make this dish for 2/3 weeks of the year. Imported cherries are bland, so use frozen, they are so much better. Even though the frozen dark cherries are sweet and delicious, I like to add a few flavours that really enhance the flavour, and go beautifully with chocolate. In a pan, simply add the cherries and the cinnamon, squeeze in the juice of one orange and warm through. I like to serve the cherries warm, just like the pancakes.
To cook the pancakes, use a small non-stick frying pan and heat it up on the stove. When the oil is hot, use a ladle to spoon some of the chocolate pancake batter into the frying pan, quickly rolling the pan so that the whole of the base of the frying pan is covered. Cook the pancake for a minute or two until nicely coloured then - if your feeling brave - flip to cook the other side. Once cooked, place on your warm tray (in the oven) and cook the next one. Repeat until you have used all of the chocolate pancake batter and you have a healthy stack of pancakes ready to devour!
The pancakes are very indulgent, but because there is relatively little sugar in the recipe and so many anti-oxidants (from the chocolate and the cherries) this is practically a 'health food'. If you want to add to that anti-oxidant value, why not grate some more dark chocolate on top... Yum!
